Sodium bicarbonate is a white powder or opaque monoclinic fine crystal, odorless, slightly salty in taste, and cool in nature. It is easily soluble in water and glycerol, and slightly soluble in ethanol (some say insoluble). The solubility in water is 7.8 g (18 ºC), 16.0 g (60 ºC), with a density of 2.20 g/cm3 and a specific gravity of 2.208,mainly used in food, feed and industry field.

Sodium bicarbonate is a commonly used food additive, mainly used for fermentation and seasoning. Meanwhile, food sodium bicarbonate also has certain health benefits.

Usage in the food industry:
Sodium bicarbonate is a commonly used food additive, mainly used for fermentation and seasoning. Meanwhile, food sodium bicarbonate also has certain health benefits.

1.Swelling agent: Sodium bicarbonate in food can produce carbon dioxide, promote the expansion and fermentation of dough, and make baked goods such as bread and cake softer and fluffy. The addition of 20g of wheat flour can be used to prepare solid cold drinking foaming agents (producing CO2) together with chlor acid, tartaric acid, etc. Because it is a harmless weak alkaline agent, adding about 0.1% to 0.2% in vegetable cleaning can make it green and stable.

2. Adjusting acidity and alkalinity: Food sodium bicarbonate can neutralize acidic substances, improve the taste of food, and increase the color and aroma of food.

3. Health benefits: Food sodium bicarbonate has certain anti acid and relieving stomach acid effects, which can alleviate discomfort caused by excessive stomach acid, promote gastrointestinal peristalsis, and relieve constipation.

4. It is used as a starter in the food industry, a carbon dioxide generator in soda and cold drinks, and a preservative in butter. It can be directly used as a raw material in the pharmaceutical industry.

Industrial use
